Stir-fried rice noodles with tamarind, fish sauce, peanuts, and lime.

Ingredients

  • 300gRice noodles
  • 300gShrimp
  • 2wholeEggs
  • 150gBean sprouts
  • 50gPeanuts
  • 3tbspTamarind paste
  • 3tbspFish sauce
  • 2tbspPalm sugar
  • 2wholeLime
  • 3clovesGarlic

Instructions

Step 1 of 7

Soak rice noodles in warm water for 30 minutes

Step 2 of 7

Mix tamarind paste, fish sauce, and palm sugar for sauce

Step 3 of 7

Heat wok, scramble eggs, set aside

Step 4 of 7

Stir-fry garlic and shrimp until pink

Step 5 of 7

Add drained noodles and sauce, toss to coat

Step 6 of 7

Add eggs back, toss with bean sprouts

Step 7 of 7

Serve topped with crushed peanuts, lime wedges, and extra bean sprouts
