Soak dried chickpeas overnight in cold water
Step 2 of 10
Drain chickpeas well (do not use canned)
Step 3 of 10
Combine chickpeas, onion, garlic, herbs in food processor
Step 4 of 10
Pulse until coarse mixture forms (not paste)
Step 5 of 10
Add cumin, coriander, salt, pepper, and baking powder
Step 6 of 10
Refrigerate mixture for 1 hour
Step 7 of 10
Form into small patties or balls
Step 8 of 10
Heat oil to 350°F (175°C)
Step 9 of 10
Fry falafel until golden brown, about 3-4 minutes

Drain on paper towels, serve in pita with tahini sauce
