Instructions

Step 1 of 9

Cube chicken, marinate in soy sauce and cornstarch

Step 2 of 9

Toast peanuts and Sichuan peppercorns

Step 3 of 9

Mix sauce: soy sauce, vinegar, sugar, and chicken stock

Step 4 of 9

Heat wok very hot, stir-fry chicken until just cooked

Step 5 of 9

Remove chicken, add chiles to wok until fragrant

Step 6 of 9

Add garlic and ginger, stir briefly

Return chicken, add sauce and peanuts

Toss until sauce thickens
